তুই, তুমি and আপনি are not politeness settings. They place two people in relation to each other, and they change the verb as well as the pronoun, so the choice runs through every sentence of a conversation rather than sitting on one word. Decide it per paragraph and a character addresses their mother one way in chapter two and another way in chapter three, which reads as a different family.
The second decision is register. Bengali carries a literary form and a colloquial one, and while modern books are written in the colloquial register, a translation of an older or deliberately formal English text may want the other. That is one choice for the whole book, not a per-chapter mood.
Both are settled from the complete text. The model reads the whole book, writes a guide of the cast, the relationships, the names and the recurring terms, and the sample is translated against it.
